Vee's Lentil Soup
This is such an easy soup to make that kicks with the heartiness of a stew.
The ingredients you will use is:
1 lb. Italian sausage
(remove casing if present)
1 28 oz. can of diced tomatoes
1 lb. dried lentils
6 cups of chicken broth
1 cup uncooked ditalini
1 tablespoon olive oil
salt and pepper to taste
Brown Italian sausage in olive oil until no pink is seen. Drain any excess oil and set aside.
In your soup pot, pour the 6 cups of chicken broth and rinsed lentils. Bring to a boil and simmer for about 30 minutes.

Return the browned sausage to the pot, along with the ditalini pasta, diced tomatoes (I like the Ro-Tel mix), salt and pepper. Cover and simmer about 10 minutes or until pasta is done (or al dente). This soup freezes well in portion size servings to be eaten later or shared with friends.
